Blueberry Bagels



Oh HELLO homemade Blueberry Bagels!!
I've always loved Bagels. They are just so delicious toasted with some butter! Or - if you're feeling like something a little sweeter, with a dab of cream cheese on top! Either way, I never thought I'd actually be able to bake my OWN bagels, but here we are! 

Thanks to the Thermomix, I'm actually starting to have some fun in the kitchen!!
I found a recipe online for basic Bagels, and decided to change it a little to make Blueberry ones. I've made a few batches of them, doing each batch slightly differently with the blueberries to see how the dough differed, and honestly, they all ended up AMAZING! You can't really go too wrong - so have some fun experimenting with it until you find your favourite way. 

Here's how it went down!


INGREDIENTS
1 & 1/3 cup of Blueberries (fresh or thawed)
200g of Milk
80g of Water
25g of Caster Sugar
25g of Butter 
15g of Yeast
480g of Bakers Flour
1 tsp salt


Roughly chop 1/3 cup of Blueberries 4 seconds/speed 6. Scrap down from sides if you need to. Add Yeast, Butter, Sugar, Milk and Water into the TMX bowl and mix 3 minutes/37°C/Speed 1

Add in Flour, Salt and 1 cup of Blueberries. Knead for 2 minutes. You'll have a lovely pretty purple dough to work with. Pull out all the dough from your TMX bowl onto some baking paper. It helps if you remove your blade to get in all the tricky places, and you'll probably need to have it detached anyway for cleaning.

Loosely cover or wrap, and leave it to rest for 30 minutes. I simply kept it on the baking paper, and moved that into a bowl, then got one of Isla's plastic plates and sat it on top.

Divide the dough up into 9 - 12 portions depending on the size you'd like them. Take each portion, and make a rough ball. Flatten it slightly, and make a hole in the middle. Stretch the dough out a little, and work it into a donut shape. Because of the Blueberries, the dough is a little more wet and sticky then it would have been without them, so you may find you need to sprinkle a little extra flour down onto your table and knead the dough into it a little to form your donut shapes more easily.

Once your bagels have been formed, let them rest for another 15 - 20 minutes. While this is happening, preheat the oven to 220°C. Then boil a large pot full of water over the stove.


Drop your bagels into the boiling water, and boil each side for 1 - 2 minutes each side. Keep in mind that they will expand a little, so depending on your pot size, you can fit 3 or 4 in MAX at a time. Once boiled, let the water drain away, and pop them down on a baking tray lined with baking paper, ready to go into the oven.
Bake for 15 - 20 mins, until just golden.


I've got to be honest, I'm yet to bake a batch of Bagels without eating one or two of them as soon as they come out of the oven! The house just smells so good while they're baking, and they taste their absolute BEST when they are hot and fresh out of the oven!! But I may need to learn some self control in that department, otherwise I can't bake them so often!

Choc Cashew Fudge


Say hello to the new kid on the block! This Healthy Choc treat is absolutely amazing!! Decadent, soft and goey, chocolatey, and hits the spot immediately!

I stumbled across the original recipe on the Wholefood Simply Blog, (which by the way, if you don't know about yet.. you NEED to check out.) Bianca's original recipe is a Choc Walnut Fudge. However, I didn't have Walnuts, so I used Cashews instead, and I also decided to double the Chocolate mixture.

Here's how I did it.

INGREDIENTS
1 cup of Cashews
3 tablespoons of Honey
1 pinch of Pink Himalayan Salt
2 Avocados
20-25 Dates
6 tablespoons of Raw Cacao
4 tablespoons of Coconut Oil
1 teaspoon of Vanilla Bean Extract


Get out a frying pan, and put it over medium heat. Heat up your Cashews and sprinkle your salt in. This took a little while, and I kept increasing the heat. (You can continue onto the Chocolate mixture part while your waiting if you like.) Once the Cashews are quite warm, add 1 tablespoon of the Honey and stir it all together. Remove the frying pan from the stove, and set aside.

Now for the Chocolate Mixture! Simply blend up the remaining ingredients really well, until you get a smooth and consistent mixture. Yep - so simple!

Line a loaf tin with baking paper, and make sure it's hanging over the edges. Mix the Cashews through the Chocolate mixture, and pour into the loaf tin smoothing out the top.

Pop it into the freezer for at least a couple hours to set.. and that's it!! Chop it up as you like, but remember to keep it in the freezer and eat it straight from there. It's quite a soft mixture, so if you leave it out for too long, it will melt away!

What are you waiting for?! It's so delicious AND healthy!! I really encourage you to try these if you LOVE chocolate but want to use healthier ingredients!! You won't regret it.

Oh!! - Guess who's Thermomix is arriving today?! I'm SOOOO excited!! I decided that I really do love using one, and it's just blends and grinds everything up so quick. It's also gotten me in the kitchen cooking actual meals (which hubby is excited about haha) so it's been really great. I can return my Mother-in-Laws now and get exploring my own! Healthy Chocolate Mousse Cups

Oh hey there good looking!

Months and months ago I came up with a recipe idea, and I have been wanting to try it out! Unfortunately though, my normal blender needs some new blades, so it struggles with making mixtures at the moment. BUT my wonderful Mother-in-Law has actually lended me her Thermomix for a month to see how I like it. (..And I have to say that I like it a whole lot!!)

First thing I did? Test out my recipe! Let me introduce you to Healthy Chocolate Mousse Cups!!

They are AMAZING and are so quick and easy to make. They are velvety and chocolatey, and the centre is actually soft like real mousse. Legit!! I am super crazy about them. I'd even go as far as to say they are my favourite Healthy/Raw Chocolate Treat that I have made yet! - And that's saying something.


Let's get to it!

INGREDIENTS
Chocolate Cup Base:
1 cup of Almonds
1/4 cup of Raw Cacao
1 tablespoon of Maple Syrup
3 tablespoons Coconut Oil
1 teaspoon of Stevia

Mousse Filling:
400ml can of Coconut Cream
1/2 cup of Raw Cacao
1 tablespoon of Rice Malt Syrup
1 tablespoon of Maple Syrup
1/4 cup of Chia Seeds
Sprinkle of Cacao Nibs to decorate!

Serves: Nine cups.

So, make the base first. Grind up your Almonds, until they become reasonably fine and small. Add the rest of the 'base' ingredients and blend together well to make a consistent mixture.

Pop nine muffin cases into a standard sized muffin tray. Evenly spoon the base mixture into the muffin cases, and press the mixture along the bottom and up the sides a little. It doesn't have to be even - in fact I think it looks best when it's a little uneven around the edges!

Pop the muffin tray into the freezer for 5-10 minutes.

While that's in the freezer, make your delicious Mousse filling! Simply blend together all the filling ingredients. (Yep, it's that easy!) Get your muffin tray out of the freezer. The base mixture should have harden up a little, but no need to stress if it's still a little soft.

Poor the Mousse into the cups evenly, and you can give the tray a little shake afterwards to flatten the mixture a bit. Then put the muffin tray into the fridge to set for a least 3 hours! Sprinkle some Cacao nibs on to decorate. This can be done before or after it's set.

Please note : Keep in the fridge and NOT the freezer, that way you'll keep that lovely 'mousse' texture.
And that's all there is to it! I really encourage you to try these!! Being a chocoholic, I'm totally obsessed with them!!

BBG - ONE YEAR COMPLETE!

Well folks, that wraps up a WHOLE YEAR of BBG! It's been such a crazy journey of self discovery. We've started to realise who we are, and what we are capable of. We've gained so much strength, both physically AND emotionally. There's no other way to say it, then to say it's been a totally life-changing year!

If you've been following my journey, you will have seen my previous posts after completing each round (Pre-Training, Round One, Round Two & Round Three). In those posts, especially the last three, I've explained my various eating guidelines and workout schedule. 

I'm going to be real with you though, over this last round (especially in the last few weeks) I haven't been AS strict. I've still done the best that I can, but life has taken an extremely busy turn with my business recently, and I found myself running out of time to fit some of the LISS & HIIT sessions in. I also ate a few things that I previously wouldn't have touched, simply because it was 'easy' and I didn't have the energy to make better choices at the time. HOWEVER, that is no longer! The fact is, I took on a few too many things in my day-to-day life and was so overwhelmed, I couldn't juggle it all anymore. I had to let something go. Unfortunately, that was my health. I think this happens to people all the time, and it's such a shame. The longer you leave it, the harder it is to get back on track! I've snapped out of it and remembered what's most important, and why I'm doing this. SO, I'm totally back on track now, completely up-to-date for the week. And already, I'm feeling so much better. 

I'm going to get straight into the figures for those interested.

MEASUREMENTS & TRANSFORMATION.

Hips (-13.5cm)
Butt (-10cm)
Thigh (-9cm)

That's 12.7kg down, and 72.5cm gone just from these measurements! CRAZY-TALK! So even though I haven't been on my absolute best behaviour for a few weeks, I have nothing to complain about there!! I am my own motivation, and I'm going to continue to push myself each day. My goals are getting so close now, it's so exciting!
Goodness I'm so glad I decided to start this a year ago. I hate to think where I would be if I hadn't! Right now, life is looking pretty great. I feel so much more confident! Speaking of confident, I recently posted on Instagram that I now fit into my goal shorts!! I bought them last year just after starting BBG and I actually couldn't fit them up my thighs. Well.. now they do. AND they do up. I tell you what.. that feels amazing!!
So. 

Whats next? Well, we keep going! 

We're currently doing our 5th round of BBG! I can't wait to see how we're feeling by THIS summer! Definitely going to be rocking some lovely Bikini's, and feeling confident doing so.

Again, this is not some 'magical' program. It's a guide, and YOU need to put in the work if you want to see a change. IT works if YOU work for it. Sometimes you need to stop thinking, and start DOING. Just make yourself start before you can talk yourself out of it!

Who knows where YOU could be in a year from today!

BBG - Round Three COMPLETE!

Well, that's another 3 months of BBG done and dusted for Lara and I, which completes our THIRD round! The BBG 2.0 guide has been amazing, and really stepped it up a notch in difficulty. There were exercises we hadn't done before which were great and challenging, and then of course there were exercises we were more familiar with. However, Kayla thought it would be fun to add extra reps to these PLUS weights. Sneaky girl. But we did what we were told, no questions asked!

It feels SO GOOD to have achieved BBG 2.0. It's something we were a little scared to undertake, but just like BBG 1.0, you just take it one workout at a time. What we also found to be great was all the personal challenges you get to do. They were amazing to measure your own personal progress and improvements. Each time a challenge came up, you wanted to beat your personal best from before! It really drove me.

I recently posted something on Instagram, but I'll write it here too because I think it's really important. 

"If you solely rely on 'motivation', you're not going to make it. Because I can guarantee that you're not going to feel super pumped and motivated EVERY day. So it's not about that. It's about making a decision, and being determined to follow through with it whether you feel 'motivated' that day or not! Sometimes you just have to get your grumpy face on, suck it up, and JUST DO IT. Because afterwards, you'll feel invincible. And you'll realise that you actually DO have what it takes. Yes.. I am talking to YOU."


This is SO true. I want to be real with you. I have not always felt like doing my workouts! Sometimes I feel really grumpy about forcing myself do them. But you know what? About 10 minutes into them, every single time, I feel so energetic and happy about doing it. It's crazy how that happens. Sometimes you need to stop thinking, and start DOING. Just make yourself start before you can talk yourself out of it!

I'm also going to be real with you and say that I wasn't as strict on myself during this round of BBG. For the first 2 rounds, I ate super clean 100% of the time (other than 1 cheat meal a week), didn't miss any workouts, and did a lot of extra LISS. I saw big results which was what I wanted! However, there were a few times over this last round that I wasn't able to get a workout done. Thats life though. Life has been very busy for me! I'm still totally committed to this, and this lifestyle change, but I'm not going to beat myself up for running out of time to do a LISS occasionally, or going out for a coffee date with my baby girl and sharing a blueberry muffin! Having said that, my diet is still very clean, and I do my absolute best to do all my workouts, plus still doing extra.

Since I started back in August last year, I had no idea what I was in for! This has been such an amazing journey. It's pushed me to become a stronger person, both physically AND mentally. I never thought I'd have abs, but they've come to say hello recently! I've also noticed quite a bit of muscle gain in my arms which is fun! (Ain't nobody gonna mess with me now! hehe) I've also been feeling like my legs have slimmed down quite a bit which is nice! It's been really interesting to see that I'm putting on lots of muscle, but still dropping in weight. I must be doing something right. (Sneaky blueberry muffins and all!) 
Fun Fact: When I bought these exercise pants, they actually didn't fit me! #winning
So now that we've completed two rounds of BBG 1.0, and one round of BBG 2.0, we are repeating BBG 2.0 again, starting today! We've already knocked off todays Leg session. BOOM. Reason behind this, is that some of the exercises were new, and so we want to get another round under our belt to really improve our form with them.

Going into our 4th round of BBG, I will be keeping up with the extra workouts I've been doing since week 6 of round 2. I will go into that more later!

GIVEN UP.
Remember that this is a lifestyle change. Something that becomes habit. But also something that you want to maintain long term, so treating yourself on occasions is totally okay if you want to! Just don’t over-do it. So other than on really special occasions, I’ve given up..

Rice // White bread // Fast Food // Coffee // Cows Milk // Sugar // Lollies  // Sweets // Ice-cream // Cakes // Chocolate etc.

SUBSTITUTES.
Quinoa // Dark Rye Bread // Coconut Water // Coconut Milk // Homemade Nut Milks // Homemade RAW Chocolate and Desserts!

RULES.
I have some general rules I stick with that keep me feeling good.

I do at least one Green Smoothie a day as one of my main meals. I used to do it for breakfast, but more recently I've been doing them for dinner instead! I am actually loving it for a couple reasons. Doing them for dinner makes sure that I don't overeat on high carb foods right before bed. Carbs are good, but I'd rather have the majority of them during the day time rather than night time. I'm also someone who LOVES breakfast. It's my favourite meal of the day. So this way, I still get to have my yummy muesli and greek yogurt etc each day! // I usually have two pieces of Dark Rye Bread to make some kind of sandwich for lunch. I only have two pieces of bread in a day. // Once a week we have family dinner night, and I use that as my cheat night. I have a Nando’s classic chicken wrap and some chips. // Snacks are important, I try and have one in-between meals (this doesn’t always happen) but I do things like homemade RAW chocolate, some Greek Yogurt with a dash of Honey and a piece of Fruit, some Fruit by itself, or Quinoa Crackers and Dip. There are a bunch of yummy sweet recipes on my blog, feel free to treat-yo-self, and indulge without feeling guilty!

WORKOUT SCHEDULE.
Since week 6 of round 2, I stepped up my LISS game, and did 6 sessions each week. I continued that throughout BBG 2.0, and I'm planning to continue with this general schedule for the next round. I know that 12 workouts a week may seem extreme, but it allows me to aim high, and if I miss a LISS here and there, I'm not going to be worried. Like I said before, now that I'm closer to my goals, I'm a little less strict on myself. I've already achieved so much more than I thought I would, and I feel so proud of myself for it! My journey does not stop here though, it's a never-ending healthy way of life. And I love it! It feels so good to work hard for the health and body that you want with your own sweat, tears and determination. By doing so, you're giving yourself time to form good habits along the way, and you're more likely to keep it up long term. There is no quick-fix that stays permanent.
Okay. Now the fun part! Lets get into the figures. These are my totals since I started BBG. Honestly, I feel a little overwhelmed by these. Even with muscle gain, I've lost over 10kg since starting.

That's 10.1kg down, and 61.5cm gone from just these measurements. MIND - BLOWN!

Again, I feel a little nervous to put up this transformation photo for all the world to see! But it continues to keep me accountable. I'm so glad I took photos from the beginning, because otherwise I wouldn't actually believe where I started, and where I am now! I still have a fair way to go to get to my goals, but I'm not the least bit concerned about it. If I'M working, IT'S working. And good things can take time! So although difficult, if by having these photos up inspires just one person to make the change in their life that they need, it will be worth it.
OH - and even though I've changed my hair, you can be sure that it's still me in all the photos! If only it was as easy to lose weight as it is to change your hair! But then where would the fun be in that?!
Like I said before, life has been very busy for me recently. I've continued to take photos of myself every morning, but I haven't actually had the time to put them together yet and make a day-by-day transformation GIF from the last round! I do plan to though, so once it's done, I'll add it into this blog post and notify people via Instagram. For now, I'll just pop in my last one for those that hadn't seen the one from the end of the last round. I can't believe I have a whole 3 more months of photos to add to it!
Like I said before, the crazy thing about this whole journey, is that it's shifted my focus in life. It's become something I really LOVE. I love accomplishing my goals, I love discovering new delicious healthy foods, I love encouraging the girls that are on the same journey to keep going! I used to think I needed a personal trainer to force me to do things because I didn't have the determination to do it by my own will. But that's not the case anymore. I've come to realise that I DO have what it takes and I CAN make it happen. And so can YOU.

Islas DIY First Birthday Party

I can't believe that our little girl is already ONE! I have no idea where the last year has gone. People tell you that it's goes fast, but I had no idea it would be over in the blink of an eye.

Isla is growing into the most beautiful, kind hearted little girl. She has such a sweet heart and her little personality is shining through. I couldn't be more proud of who she is becoming. Every day we watch her learning new things, and her curious eyes watch your every move. Her laugh is infectious, her smile is BEAUTIFUL, and her joy is so obvious. She can't help but bop along to music and squeal while she excitedly runs down the hallway. The way she cuddles us, and all of her toys completely melts me from the inside out.

I didn't know that I could have so much love for such a little person. My heart feels like it's bursting, in the best kind of way.

We threw her a little first birthday party over the weekend, and made it bright, fun and colourful, just like Isla. As you probably know, I've always been a big DIY person, so planning this party was no different! Some ideas I came up with in my sleep, and others I got inspiration from pictures I had seen.

I had planned a confetti themed party, with a pretty little dash of boho thrown in, and it was going to be held out the back of our Nans place. There are these beautiful trees there, and with all the decorations I planned out, it was going to create this special little outdoor space. But in my head, the weather was going to be beautiful also, and unfortunately on the day it of course decided to pour down with rain!! As it always seems to do when you plan an outside event. Typical. SO, come Saturday it was a little stressful changing the whole party location to be undercover. In fact, I didn't even get to use my most favourite DIY project that took me probably a week straight to make, because there was no place to hang it. Ahhh. Such is life. The day still turned out really lovely, and Isla had an absolute ball which is the important thing!

 I wish we had gotten more photos, but with the rush of things on the day, it just didn't happen! I've put together a few snaps so you can see some of the things we made.

One of my favourite things I made was the little romper you see on Isla above!! A couple days before her party, I drafted up a pattern from scratch, and cut out my pattern onto plain white fabric. Then I got my fabric ink out and mixed up some colours. Using different sized circular foam brushes (which I later found out are called Dabbers) I stamped on the confetti spots! Once dried, I ironed it to set the ink, and then sewed it together. 

It turned out even better than I thought it would! She looked like a giant confetti marshmallow, and I LOVE it! If it didn't take so much time to make to the pretty fabric, I would be selling these in my shop! In fact.. I might just do it anyway!! Because it's so pretty, and life needs pretty things in it.
I picked up some glass vases from local Op Shops, with the idea to make some table decorations! When I got home, I painted them white. It probably took about 3 coats of paint. Then I used my confetti hole punch and coloured card, both from Spotlight, and glued on little confetti spots close to the tops of the vases. I love how they turned out. Then I realised I probably needed something to go in the vase, and I made up Pom Poms, and hot glue gunned them onto kebab sticks that I had also painted white. So pretty!
One of the big projects that took a lot of time was these giant paper mache letters! My Sister-in-Law had previously cut the letters out from foam blocks using a wire cutter. She had them for her engagement party, and said I could have them. She had all the letters I needed except for the 'I'. So I used an 'R' and cut it up to make an 'I'. Honestly, it was very messy and I had foam everywhere in our kitchen because I didn't use a wire cutter! But once I got a coat of paper mache onto it, it was much better. I painted them white, and then stuck more confetti card all over them! This took hours and hours, but I loved the end result! The letters were originally going to stuck in the grass, but due to change of location, they ended up on the food table.

Also whipped up some fruit kebabs sticks to have for people to make their own fruit sticks. (You know.. a healthier option to the Oreos!)
The day before the party I quickly typed up some 8"x10" prints to have around the place as well. Some of these will be going in her room now. 
My favourite DIY project that I mentioned before was a beautiful white backdrop. It took so long to make, and unfortunately didn't get used! HOWEVER, it's now hanging in Isla's room, so I can't complain. It's made from deli paper. We cut up 1000's of little white half circles, and taped them into cones. Then using a pin and fishing wire, stitched them into rows of roughly 30. I really love how it turned out! He's a sneaky preview..
With the help of my Mother-in-Law and Sister-in-Law, we spent a couple nights making 16 giant DIY tissue paper flowers. I bought and painted the sticks white, then made the tissue paper flowers. I later stuck them to the sticks, and they were placed in the garden. There were dark pink, light pink, dark purple, lights purple, white and mint green ones. So pretty! We didn't get a photo of them at the party, but I got one afterwards. As you can see, Isla was a big help with getting a photo!
OH! And one more mention! Because they took so long to make! I bought some packets of little wooden spoons for the Ice Cream bar. I painted the ends white, then stamped on words, then painted on little coloured dots to go with the theme! Cuuuuutee.


I have a few snaps from her actual party, so I'll post them below. Lots of fun things, like an Ice Cream Bar and Macaroons with personalised box covers as favours! But another one of my favourites is the cake that my Mother-in-Law made! It was a confetti cake with actual confetti cake spots throughout it. Again, we got the idea from Pinterest. It turned out great!!
Oh! Another genius idea by my Mother-in-Law was the large blow up pool with little balls that she organised. She also hired play equipment for the kiddies. It was definitely a hit! Isla was making friends and making my heart burst even further!!
Now that the party is over (and the house is finally clean again), I can relax a little and get back into a normal routine. Getting to sleep before midnight is definitely a good thing!!

All in all, the party was a success! We are so lucky to have such amazing family and friends in our lives. Isla was totally blessed and spoilt with love. Thank you to everyone who came to celebrate with us, and to everyone that helped make the day happen!!
