Chia Pudding Coconut Bowl

I have officially popped my coconut cherry. Or rather 'cracked' it. If that makes sense! I bought a coconut on a whim, and then let it sit at home staring at it for a few days. As silly as it was, I was a little nervous to go near it, because I didn't really know what to do with it! But it turns out they are not as scary as you might think, and after watching a quick youtube video, I went to Joe's toolbox and got out a screwdriver and a hammer. And thats all you need to crack open your own bowl of fresh deliciousness!

I drained the coconut water through the 'eyes' of the coconut, and then strained the water through my nut bag and to my surprise it was SO yummy. Just like the coconut water you would buy from the shops, except it's actually a stronger flavour!
 Then I got my hammer and cracked the coconut open. If you're going to do this yourself, make sure you watch a video because there is a specific technique to do this.

There are endless things you could use the coconut bowls for, but I was after a little post-workout snack idea. I've seen chia pudding everywhere recently, so I decided to make up a batch with some delicious fruit.

INGREDIENTS
Chia Pudding
1/4 cup of Black Chia Seeds
3/4 cup of Coconut Milk
1 Teaspoon of Vanilla Bean Paste
1/2 cup of Coconut Water (or plain water if you have none)

Fruit ideas
Mango
Raspberries
Peach

Make up your Chia pudding, simply buy combining the ingredients. Mix together well. You'll think it's too watery, but pop it into the fridge for an hour or two and the Chia Seeds will expand. It will thicken up perfectly!

Once it's nice and thick, serve it up and decorate with your chosen fruit. Then devour!
